Why is 6/8 great for romantic rock ballads ? Because any measure in 3 or 6 creates a circle which is the sign of eternity and this gives the music you are playing that eternal vibe which has to be created. In romantic balades it’s always about emotions and not the technique or playing fast - but the bad news is that in my opinion slow songs on 6/8 are the hardest thing to play if you play an instrumental version of it. Why is that like this ? Because you have a lot of time to play the wrong notes.
